- 50 g de chocolat blanc
- 200 ml de lait
- 100 ml de crème
- ½ cuillère à thé de sucre/miel
- 1 cuillère à thé de poudre de matcha SAKAO
Préparation :
- Dans une petite casserole, porter le lait et la crème presque à ébullition.
- Ajouter le chocolat blanc et remuer doucement avec un fouet pour le faire fondre.
- Tamiser la poudre de matcha dans la casserole en continuant de remuer doucement.
- Déguster!
*Facultatif : Ajouter du sucre ou du miel pour ajuster le niveau de sucre. .

Vinaigrette au matcha / Matcha Dressing

- 75 ml de vinaigre blanc
- 200 ml d’huile d’olive extra vierge
- 1½ cuillère à thé de poudre de matcha SAKAO
Préparation :
- Mettre l’oignon, l’ail, la moutarde et le sel et poivre dans un mélangeur.
- Mélanger pendant 30 secondes.
- Ajouter le vinaigre blanc et la poudre de matcha, puis recommencer à mélanger en versant lentement l’huile d’olive.
- Déguster!

- Add onion, garlic, mustard and salt and pepper into a blender.
- Blend the ingredients for 30 seconds.
- Add white vinegar and matcha powder, then turn the blender back on and add the olive oil in a steady stream.

Pain doré au matcha / Matcha french toast

Commancez votre weekend avec délicieux pain doré au matcha!
Préparation : 10 minutes

Ingrédients :
- 1 tranche de pain
- 70 ml de lait
- 1 œuf
- 3 cuillères à table de sirop d’érable
- fruits de champs / banane
- 1½ cuillère à thé de poudre de matcha SAKAO
Préparation :
- Dans un plat peu profond, battre l’œuf et le sirop d’érable.
- Ajouter le lait et la poudre de matcha tamisée et bien mélanger.
- Faire tremper la tranche de pain dans le mélange d’œuf 1 à 2 minutes de chaque côté.
- Cuire à feu moyen-doux jusqu’à ce que les deux côtés soient bien dorés (environ 5-7 minutes sur chaque coté).
- Déguster!
*Astuce : Faire tremper le pain toute la nuit pour un pain doré très moelleux.

- 3 tablespoons Maple syrup
- wild berries / banana
- 1½ teaspoon Matcha SAKAO powder
Preparation :
- In a shallow dish, beat the egg and maple syrup together.
- Add milk and sifted matcha powder into the egg mixture.
- Soak the bread in the egg mixture for 1-2 minutes on each side.
- Cook on medium-low heat until both sides are golden brown (approximately 5-7 minutes on each side).
- Enjoy!
*Tip: Soak the French toast overnight to have extra pillowy French toast.

Truffes chocolat blanc et thé vert Matcha pour la Saint-Valentin / White chocolate with Matcha truffles for Saint-Valentine’s day

Préparez de délicieuses petites douceurs faites-maison pour la Saint-Valentin avec cette recette de truffes au Matcha! Parfait pour une pause sucrée romantique après le souper ou pour offrir un cadeau de Saint-Valentin unique à votre moitié.
Préparation : 20-30 minutes
Repos : 1 h à 12 h
Pour une vingtaine de petites truffes
Ingrédients
170g de chocolat blanc
60 ml (1/4 tasse) crème liquide
30 ml (2 c. à soupe) thé vert en poudre Matcha SAKAO
Préparation
1. Dans une casserole à feu très doux, faites fondre le chocolat dans la crème liquide et 15ml (1 c. à soupe) de poudre de thé vert Matcha SAKAO en remuant constamment jusqu’à obtenir une belle ganache.
2. Placez-la au frais dans un récipient plat de préférence, pendant au moins une heure, une nuit au mieux.
3. Préparez 2 assiettes, une avec 15ml (1 c. à soupe) du thé Matcha SAKAO saupoudré un peu partout et l’autre vide pour y déposer les truffes.
4. Avec une cuillère, prélevez un peu de ganache et formez une belle boule avec vos mains et placez-la directement dans l’assiette avec le thé matcha, roulez le tout pour bien la recouvrir de thé et placez-les ensuite dans l’assiette vide.
5. Conservez ensuite des truffes au frais.

Ingredients
170g White chocolate
60 ml (1/4 cup) Cooking creme
30 ml (2 tbsp) Green tea powder Matcha SAKAO
Preparation
1. In a saucepan add the chocolate and let it melt on a very low heat with cream and 15ml (1 tbsp) of Matcha and stir until very smooth.
2. Place it into a container and refrigerate until the ganache has thickened (at least 1 hours or overnight).
3. Prepare 2 plates, one with 15ml (1 tbsp) of Matcha sprinkled and the other empty one to place the truffles.
4. With a spoon, take a little portion of ganache and form a ball with your hands. Place it on the plate with the matcha, roll to cover it well and then place it on the empty plate.
5. Then store the truffles in a cool place.

Cérémonie de thé d’hiver Yobanashi au Méxique / Winter tea ceremony Yobanashi in Mexico

La cérémonie de thé Yobanashi est une cérémonie d’hiver lors de laquelle du charbon est brûlé pour diffuser une fragrance agréable et un repas léger appelé Kaiseki, des sucreries japonaises nommées Wagashi ainsi que du Matcha épais Koicha et du Matcha régulier Usucha sont servis dans le noir à la lumière des bougies. Cette cérémonie donne l’opportunité d’apprécier les longues nuits et l’obscurité de l’hiver.
Nous avons voyagé à Cocoyoc au Mexique en novembre dernier pour partager cette extraordinaire cérémonie de thé hivernale. Nous avons entamé la soirée avec une petite introduction de la cérémonie suivie par la purification des mains. Un repas Kaiseki, une sucrerie japonaise Wagashi et enfin un bol de Matcha ont ensuite été servis à chaque participant.
Plusieurs participants nous ont fait savoir qu’ils se sont bien détendus et se sont sentis Zen lors de la cérémonie pendant la préparation du Matcha grâce au son relaxant de l’eau, aux mouvements et à l’obscurité dans le salon de thé.
Ce fut une magnifique opportunité de partager cette tradition de thé japonaise et de profiter d’un beau moment ensemble.
The Yobanashi tea ceremony is a winter ceremony in which charcoal is burned in order to release a pleasant fragrance and a light meal called Kaiseki, Japanese sweets called Wagashi as well as thick Matcha called Koicha and regular Matcha called Usucha are served by candlelight. The ceremony provides an opportunity to enjoy the long winter nights and the darkness of winter.
We traveled to Cocoyoc, Mexico last November in order to share this extraordinary winter tea ceremony. Our evening began with a little introduction of the ceremony followed by the purification of hands. A Kaiseki meal, a Wagashi and finally a bowl of Matcha were then served to each participant.
Many participants commented that they felt relaxed and very Zen during the preparation of the Matcha because of the soothing sound of the water, the movements and the darkness in the tea room.
It was such a great opportunity to share this Japanese tea tradition and spend a wonderful moment together.

Pudding croquant au Chia, Matcha SAKAO et petits fruits / Crunchy pudding with Chia, Matcha SAKAO and berries

Nous avons travaillé avec Mme. Marianne Lefebvre, nutritionniste-diététiste et fondatrice présidente d’Intégration Nutrition, pour développer une recette santé avec notre Matcha SAKAO!
Essayez cette excellente recette de Pouding croquant au chia Matcha SAKAO et petits fruits pour un déjeuner rapide, délicieux et bon pour la santé!
Préparation : 10 minutes
Repos : 1 h à 12 h

Ingrédients
1 litre (4 tasses) lait de soja saveur originale
10 ml (2 c. à thé) extrait de vanille
10 ml (2 c. à thé) poudre de thé vert : Matcha SAKAO
190 ml (3/4 tasse) graines de chia blanc
60 ml (1/4 tasse) baies de goji
500 ml (2 tasses) fraises fraîches du Québec coupées en dés
60 ml (1/4 tasse) pacanes grillées concassées (voir astuce)
Préparation
- À l’aide d’un pied mélangeur, mélanger la boisson de soja, l’extrait de vanille et le Matcha SAKAO jusqu’à l’obtention d’un mélange homogène d’un beau vert crémeux.
- Ajouter les graines de chia et les baies de goji et remuer doucement 2 à 3 minutes. Réserver.
- Répartir les dés de fraises dans le fond de quatre pots en verre.
- Verser le pouding sur les fraises, couvrir et réfrigérer 1 heure ou toute la nuit.
- Garnir de pacanes concassées et déguster.
- Pour un petit déjeuner complet, accompagner de craquelins de grains entiers nature.
Variantes : Pour un goût plus prononcé en thé, ajouter 5 ml de matcha. Changer la garniture, essayer le classique duo automnal pommes râpées et canneberges séchées ou, pour les becs sucrés, bleuets et dattes fraîches.
À noter : Pour un pouding instantané, ajouter 1/4 tasse d’avoine à cuisson rapide.
Astuce : Les noix sont comme les épices, il vaut toujours mieux les griller. Voici deux bonnes méthodes :
- Au micro-ondes, de 2 à 4 minutes en remuant 1 ou 2 fois pendant la cuisson.
- Sur le poêle à feu mi-fort, sans utiliser d’huile ou de beurre, faire dorer quelques minutes en remuant constamment pour ne pas qu’elles brûlent. Laisser refroidir à température ambiante et utiliser ensuite dans toutes vos recettes.

Try this excellent Crunchy pudding with chia, Matcha SAKAO and berries for a fast, healthy and delicious breakfast!
Preparation : 10 minutes
Cooling : 1 h – 12 h

Ingredients
1l (4 cups) original soy milk
10 ml (2 tsp) vanilla extract
10 ml (2 tsp) green tea powder : Matcha SAKAO
190 ml (3/4 cup) White chia seeds
60 ml (1/4 cup) goji berries
500 ml (2 cup) fresh strawberries from Quebec cut in cubes
60 ml (1/4 cup) crushed grilled pecan nuts (see tip)
Preparation
- Mix soy milk, vanilla extract and the SAKAO Matcha by using a blender until you get a beautiful, creamy, homogeneous green mixture.
- Add chia seeds and goji berries and stir gently for 2 to 3 minutes. Set aside.
- Portion the diced strawberries into the bottoms of four glass jars.
- Pour the pudding over the strawberries, cover and refrigerate for 1 hour or overnight.
- Garnish with crushed pecans and enjoy.
- For a full breakfast, add whole grain plain crackers.
Variations: For a richer Matcha flavour, add another 5 ml of Matcha. For other toppings, try the classic autumnal duo of grated apples and dried cranberries or, if you have a sweet tooth, garnish with blueberries and fresh dates.
Note: For instant pudding, add 1/4 cup quick-cooking oats.
Tip: Nuts are like spices, it’s always better to toast them. Try either of these two methods:
- In the microwave, heat for 2 to 4 minutes, stirring once or twice during cooking.
- In the frying pan at medium-high heat, brown without oil or butter for a few minutes, stirring constantly so that they do not burn until nuts turn golden brown in colour. Let them cool at room temperature.

Atelier de thé Japonais au Méxique / Japanese tea workshop in Mexico

Nous avons eu la chance d’offrir un atelier de cérémonie de thé japonaise à un groupe d’amateurs de thé japonais à Cocoyoc au Mexique en collaboration avec l’Escuela Mexicana de Té.
Un salon de thé avec un petit jardin avait été construit pour donner aux participants la chance de vivre une vraie cérémonie de thé japonaise.
Les participants ont appris la bonne étiquette avant et pendant la cérémonie de thé, la manière d’entrer dans le salon ainsi que les étapes de la cérémonie.
La cérémonie commence par la purification de chaque ustensile. On procède ensuite à la préparation du Matcha, puis on termine avec le nettoyage des ustensiles. Lors de la cérémonie, les participants se voient offrir des sucreries et leurs bols de thé de manière traditionnellement japonaise par notre associée.
C’était également une opportunité d’apprendre la philosophie Zen Ichigo Ichie (une rencontre, une opportunité). Selon le mode de pensée Ichigo Ichie, il faut apprécier la présence de chaque invité, des ustensiles utilisés, de la saveur du Matcha, de la température de l’eau, de la calligraphie, des fleurs, des sucreries, etc. parce que ces choses et ces moments lors de chaque cérémonie de thé sont uniques et ne se reproduiront plus. Ce concept s’applique donc aussi à la vie quotidienne et nous apprend à apprécier le moment présent et tout ce qui nous entoure. Le “présent” est un temps du verbe, mais il nous rappelle aussi la présence des “ petits cadeaux de la vie, incluant les personnes et les choses”.
Dans chaque cérémonie, nous avons utilisé des bols à thé faits à la main au Mexique pour vraiment profiter du mélange culturel entre ces deux pays.
Il faisait chaud à Cocoyoc mais il faisait encore plus chaud dans le salon à cause de l’eau chaude et du grand nombre de gens dans un petit espace, mais tous les participants étaient quand même très satisfaits de cette expérience.
Dans d’autres salles, l’équipe de l’Escuela Mexicana de Té offrait un atelier sur le Matcha: son histoire, une comparaison des différentes qualités de thé et une explication du mode de préparation du Matcha. L’autre équipe faisait une présentation sur plusieurs sortes de thé vert de notre plantation au Japon: Fukamushi, Kona-cha, Sencha et Gyokuro.
Le deuxième jour, nous avons organisé une présentation et un atelier sur la culture japonaise. Nous avons parlé de l’origami, de la calligraphie, des sucreries japonaises et d’autres sortes de thé vert: Genmai-cha, Hoji-cha avec Genmai, Hoji-cha et Genmai-cha avec Matcha.
Nous avons terminé notre atelier par une dégustation de confiture au Matcha avec un pain Mexicain nommé Concha à saveur de Matcha.
Nous remercions tous les participants d’être venus et d’avoir partagé cette expérience magnifique avec nous. De plus, cet atelier de thé de deux jours n’aurait pas été un si grand succès sans l’aide de l’Escuela Mexicana de Té qui nous a aidés à mettre sur pied ce projet.

We were given an opportunity to offer a Japanese tea ceremony workshop to a group of Japanese tea lovers in Cocoyoc, Mexico in collaboration with the Escuela Mexicana de Té.
A tea room with a little garden was built to allow the participants to experience a real Japanese tea ceremony.
The participants were able to learn the correct etiquette before and during the tea ceremony, the right way to enter the room and the steps of the ceremony.
We started with the purification of each utensil, then followed with the preparation of the Matcha and ended with the cleaning of the utensils. The participants were given sweets and bowls of tea in the traditional Japanese manner by our associate.
It was also an opportunity to learn the Zen philosophy of Ichigo Ichie (one encounter, one opportunity). According to Ichigo Ichie, the presence of each guest, each tea utensil we used, the flavour of the Matcha, the temperature of the water, the calligraphy, the flowers, the sweets, etc. must all be appreciated because each specific moment during each tea ceremony only happens once and will never reoccur. The concept of Ichigo Ichie thus also applies to daily life and teaches us to appreciate the present moment and everything we have around us. Though the “present” is a verb tense, it also refers to these ‘little gifts of life, which include people and things.”
In each ceremony we performed, we used tea bowls hand made in Mexico for a truly culturally diverse experience.
In other rooms, other members of the Escuela Mexicana de Té were conducting a Matcha workshop where they talked about the history of Matcha, compared different qualities of Matcha and explained how to prepare Matcha. Other members gave a presentation about different types of green tea from our plantation: Fukamushi-cha, Kona-cha, Sencha and Gyokuro.
On the second day, we organized a presentation and a workshop about Japanese culture. We talked about origami, calligraphy, Japanese sweets and other types of green tea: Genmai-cha, Hoji-cha with Genmai, Hoji-cha and Genmai-cha with Matcha.

The workshop ended with a tasting of a delicious Matcha spread along with a Matcha flavoured Mexican pastry called Concha.
Our appreciation goes out to the participants who came and shared such a great experience with us. Many thanks also to the Escuela Mexicana de Té for making this two day workshop a great success.
