Sencha Fukamushi

Description

Ce thé vert qui provient de la première récolte contient différentes parties de la plante, les feuilles et les tiges, et est fait à l’aide du processus de l’étuvage. Le terme Fukamushi désigne des thés à l’étuvage profond. C’est son étuvage plus long qui lui donne son caractère particulier et qui en fait un thé de qualité de loin supérieure au thé vert Sencha régulier. Le Sencha Fukamushi est chauffé à la vapeur pour arrêter l’oxydation des feuilles, et ce plus longtemps que le Sencha ordinaire (1-2 minutes), ce qui lui donne une saveur profonde, puissante et végétale et une couleur vert foncé. Il est riche en catéchine, un antioxydant qui a des effets anti-âge et anti-cancer.

Preparation

1) Put 2 teaspoon (about 5g) of tea in the teapot.

2) Pour hot water of 75-80 degrees (180 ml) into a tea teapot and infuse for 30-45 seconds.

4) Pour the tea little by little while alternating between cups so that the tea is equally distributed and its density is equal in each cup.

This green tea from our plantation in Shizuoka comes from the first harvest. It contains different parts of the plant, leaves and stems, and is put though a steaming process. This deep steaming makes all the difference and ensures that Sencha Fukamushi is superior to regular Sencha. Sencha is steamed with heat to stop the oxidation of the leaves, and this for a longer period of time than regular Sencha (1-2 minutes), which gives it a deep, vegetal flavour and a deep green colour. It is rich in catechin, an antioxidant known for its anti-aging and anti-cancer properties.
