Veux-tu cuisiner avec Matcha? Notre amie Noémi de REMBOBINE – Back to basics a créé une recette de brioches roulées au Matcha et au sésame noir!

Ingrédients

GARNITURE
100 g de purée de sésame noir 
30 g de sucre non raffiné
40 g de beurre mou
45 g de crème de coco
Un peu d’eau pour obtenir une texture de pâte à tartiner onctueuse mais qui se tient
Graines de sésame dorées et noires

BRIOCHES
470 g de farine (perso j’ai mélangé blé ancien et épeautre)
2 càt. 1/2 de levure instantanée
60 g de sucre non raffiné
10 g de matcha biologique Sakao 
1/2 càt. de sel de mer
240 ml de lait d’avoine, tiède
60 g de beurre, fondu
40 ml de crème de coco

GLAÇAGE MATCHA
160 g de sucre glace
2 càs + 2 càt de lait d’avoine
1 càt. de matcha biologique Sakao
Une bonne pincée de sel de mer

Préparation

Commence par préparer la garniture : Mélange la purée de sésame, le sucre, le beurre, la crème de coco et l’eau. Réserve.

Dans un batteur sur socle, mélange la farine, la levure, le sucre, le matcha, le sel dans un bol. Incorporer le lait puis le beurre fondu. Mélange à basse vitesse avec le crochet pétrisseur jusqu’à ce qu’une boule commence à se former. Continue à pétrir pendant encore 5 mn. Sur une surface farinée, pétris la pâte environ 2-3 minutes à la main. Couvre la pâte d’un linge humide et laisse-la reposer 20 mn.

Sur ta surface farinée, étale la pâte en rectangle d’environ 30 x 25 cm à l’aide d’un rouleau à pâtisserie. Répartis la garniture au sésame et les graines par-dessus. Coupe en 6 lanières d’environ 5 cm dans la largeur et roule fermement. Place les rouleaux obtenus dans un moule beurré (environ 20 x 30 cm).
Couvre d’un linge humide et laisse reposer 1h. 

Préchauffe le four à 180°C (350°F), et prépare le glaçage en mélangeant tous les ingrédients dans un petit bol.
Cuis les brioches au four 20 mn environ jusqu’à ce qu’elles soient légèrement dorées sur les bords et que les centres soient gonflés et bien cuits. 
Laisse refroidir légèrement avant de servir avec le glaçage.

Ces brioches sont excellentes à la sortie du four. Si tu ne les manges pas tout de suite, attends le dernier moment pour mettre le glaçage parce qu’un petit tour au four pour leur redonner leur texture initiale sera nécessaire last minute.

Brioches

470 g of flour (personally I mixed old wheat and spelled)
2 tsp 1/2 instant yeast
60g unrefined sugar
10g organic Sakao matcha 
1/2 tsp sea salt
240 ml oat milk, lukewarm
60g butter, melted
40ml coconut cream

MATCHA GLAZE
160g icing sugar
2 tsp + 2 tbsp oat milk
1 tsp from organic Sakao matcha 
A pinch of sea salt

Preparation

Start by preparing the filling: Mix the sesame puree, sugar, butter, coconut cream and water. Reserve.

In a stand mixer, combine the flour, baking powder, sugar, matcha, salt in a bowl. Add the milk and then the melted butter. Mix on low speed with the dough hook until a ball begins to form. Continue kneading for another 5 minutes. On a floured surface, knead the dough for about 2-3 minutes by hand. Cover the dough with a damp cloth and let it rest for 20 minutes.

On your floured surface, roll out the dough into a rectangle of about 30 x 25 cm using a rolling pin. Spread the sesame filling and seeds on top. Cut into 6 strips about 5 cm in width and roll up tightly. Place the rolls obtained in a buttered mold (about 20 x 30 cm).
Cover with a damp cloth and let stand for 1 hour.

Preheat the oven to 180°C (350°F), and prepare the glaze by mixing all the ingredients in a small bowl.
Bake the brioches in the oven for around 20 minutes until they are lightly browned on the edges and the centers are puffy and well cooked.
Let cool slightly before serving with frosting.

These buns are excellent right out of the oven. If you don’t eat them right away, wait until the last moment to put the icing on because a short turn in the oven to restore them to their initial texture will be necessary at the last minute.
