Le japon et l’omotenashi / Japan and omotenshi

Avez-vous déjà entendu parler de l’omotenashi ou de l’hospitalité omotenashi?

Ce terme décrit une profonde hospitalité qu’on voit souvent dans les hébergements, les cérémonies, les magasins, les restaurants, etc.

« Omote » signifie la face publique ou l’image qu’on cherche à montrer aux autres, et « nashi » signifie « rien ». Ensemble, ces deux termes dénotent une hospitalité offerte du fond du cœur sans dissimulation ou prétention.

Pour mieux comprendre où se situe l’omotenashi, regardons l’échelle de l’hospitalité.

Tout au bas de la pyramide se trouve la morale, des comportements standards que la société juge bons ou mauvais. L’hospitalité à ce niveau est très faible.

Ensuite viennent les manières, les standards du bon comportement dans la société.

Puis vient le service, un standard de bon comportement dont on peut bénéficier moyennant une contrepartie monétaire.

Sur l’avant-dernier palier se trouve l’hospitalité, un traitement ou accueil généreux souvent offert en s’attendant à quelque chose en retour.

Au sommet de la pyramide, c’est l’omotenashi, un comportement généreux sans aucune attente de retour.

C’est l’une des bases de la cérémonie du thé avec l’ichigo ichie, l’idée que chaque rencontre avec un convive est un moment unique qui doit être honoré. L’hôte veut faire en sorte que l’invité se sente aussi important et bienvenu que possible sans s’attendre à aucune récompense.

La cérémonie du thé comprend véritablement toutes les facettes de la culture japonaise!

Have you ever heard of omotenashi or omotenashi hospitality?

This term describes a profound hospitality that is offered in home stays, ceremonies, retail, dining and many other places.

“Omote” means public face or the image one wishes to present to the public, and “nashi” means nothing. Together, these words mean hospitality offered from the heart without hiding or pretense.

The following scale of hospitality will help show exactly where omotenashi is located.

At the bottom of the pyramid lie morals, standards or behaviours which society determines to be right or wrong. The sense of hospitality on this tier is very low.

Then come manners, the basic standards of good behaviour in society.

Next is service, a standard of good behaviour you get in exchange for monetary compensation.

Second from the top comes hospitality, which is generous treatment or welcome often given with the expectation of something in return.

At the very top of this pyramid lies omotenashi, which is generous behaviour offered without expectation of return.

It is one of the foundations of tea ceremony along with ichigo ichie, the idea that each meeting with a guest is a once in a lifetime experience, and every moment should be honoured. The host makes the guest feel as important and welcome as possible, while expecting nothing in return

Au cours des huit années depuis qu’elle a lancé son entreprise, Reina a collaboré avec divers entrepreneurs locaux, partageant ensemble leurs passions respectives.

« Puisque je travaille seule, ces collaborations m’offrent de belles expériences mais aussi de précieuses leçons. Comme on a tous des entreprises différentes, travailler ensemble me permet de voir différents produits, clients et façons de faire. Ça me donne aussi l’occasion d’interagir avec d’autres clientèles, de faire preuve de créativité, d’explorer des idées intéressantes et de concevoir de nouveaux projets pour l’avenir », explique Reina.

« Même si on ne vend pas les mêmes produits, en tant qu’entrepreneurs, on a tous la même mission : partager ce qu’on aime et faire découvrir aux gens les choses qui nous enthousiasment. C’est pour ça que j’ai l’impression qu’on travaille tous pour réaliser un objectif commun. »

Au cours des dernières années, Reina a travaillé avec plusieurs compagnies locales.

L’un de ses collaborateurs de longue date est Kyoto Fleurs. Reina adore travailler avec la propriétaire, Marilou, car elles cherchent toutes deux à offrir des produits de qualité remplis de personnalité. Elles travaillent bien ensemble et rigolent beaucoup quand elles partagent un local.

Reina collabore aussi souvent avec Jacinthe de MTL Shamisen Project quand elle fait des cérémonies du thé. Reina et Jacinthe se sont rencontrées à un événement il y a quelques années et se sont tout de suite bien entendues. Depuis, elles ont participé à plusieurs événements ensemble. La musique de shamisen de Jacinthe ajoute un moment Zen aux cérémonies et aide à plonger le public dans la culture japonaise.

Reina collabore également avec une autre entrepreneure japonaise, Yuki de Kimono Yuki. Elles sont toutes deux fières d’offrir des produits raffinés qui représentent le Japon et sa culture, et sont heureuses de pouvoir partager leurs expériences à titre d’entrepreneures mais aussi comme compatriotes vivant à l’extérieur du Japon.

Récemment, Reina a commencé à travailler sur une gamme de produits de thé avec Hélène et Mario de LEBON Trait d’Union. Reina a rencontré Hélène à un atelier de Wagashi japonais et elles sont restées en contact. Cet été, elles ont enfin commencé à travailler ensemble pour produire une gamme de produits qui ont une histoire. Comme le suggère le nom de la compagnie, Trait d’Union, leur but est de relier les gens par le biais des choses qu’ils aiment, des rencontres, de la nourriture, des voyages, de la culture, etc.

Reina a eu plusieurs rencontres en ligne avec Hélène et sa directrice des opérations Cheryl. Ces rencontres sont d’ailleurs assez spéciales. Hélène est française et vit à l’Île-du-Prince-Édouard, Cheryl vient du Venezuela et vit en Équateur et Reina est japonaise et habite à Montréal, et leurs rencontres se déroulent habituellement en espagnol. Elles viennent d’endroits différentes et vivent dans des villes différentes, mais elles adorent toutes les trois rencontrer des gens et favoriser les rencontres.

Cet hiver, elles préparent quelque chose de spécial pour vous permettre de commencer l’année en beauté et en santé, restez à l’écoute pour la nouvelle!

Reina adore chaque collaboration et chaque personne avec qui elle travaille. Elle absorbe cette énergie positive et la verse dans tout ce qu’elle fait. Travailler avec les autres l’aide à grandir comme entrepreneure et comme individu.

Over the eight years since she started her business, Reina has collaborated with various local entrepreneurs, sharing each other’s passions together.

“Because I work by myself, these collaborations have not only been great experiences but also precious lessons. Because we all have different businesses, working together allows me to see different products, customers and approaches. I also get the chance to interact with different clienteles, get creative, work on interesting ideas and come up with new projects for the future,” explains Reina.

“Though we don’t sell the same products, as entrepreneurs, we all have the same mission, which is to share what we love and help people discover the things we are passionate about. That’s why it feels like we are all working towards the same goal.”

Over the last few years, Reina has collaborated with several local companies.

One of her oldest collaborators is Kyoto Fleurs. She loves to work with the owner, Marilou, because they both strive to offer high quality and personality-filled products. They work well together and have great laughs when they share a space.

Reina also often works with Jacinthe from MTL Shamisen Project when she performs Japanese tea ceremonies. Jacinthe and Reina met at an event a few years ago and clicked right away. Since then, they have participated in various events together. Jacinthe’s shamisen music adds a Zen moment to the tea ceremonies and helps immerse attendees in Japanese culture.

Reina also collaborates with another Japanese entrepreneur, Yuki from Kimono Yuki.  They both take pride in offering refined products that represent Japan and its culture, and enjoy being able to share their experiences not only as entrepreneurs but also as compatriots living outside Japan.

Recently, Reina started working on a line of tea products with Hélène and Mario from LEBON Trait d’Union. Reina first met Hélène at a Japanese Wagashi workshop and they kept in touch afterwards. This summer, they finally started collaborating to produce a line of products with a story behind them. Just like the name of the company, Trait d’Union (which means “hyphen” in English), suggests, their goal is to connect people through things they love, different encounters, food, trips, culture, etc.

Reina has had several meetings online with Hélène and her director of operations, Cheryl. These meetings are quite special. Hélène is French and lives in Prince Edward Island, Cheryl is Venezuelan and lives in Ecuador and Reina is Japanese and lives in Montreal, and their meetings normally take place in Spanish. Though they come from different backgrounds and don’t even live in the same city, they all love to connect with people and help others connect as well!

Reina loves every single collaboration she has done and everyone she works with. She absorbs all the positive energy and channels it into what she does. Working with others helps her grow both as an entrepreneur and as a person.

Chocolat chaud au matcha

Avec les journées de plus en plus froides, pourquoi ne pas allier chocolat blanc et matcha pour créer une boisson chaude absolument décadente ? Un chocolat chaud au matcha est la boisson parfaite pour prendre une pause sucrée cet hiver !

Voici les ingrédients que j’ai utilisés pour créer mon chocolat chaud au matcha bio :

  • 300 ml de lait au choix
  • 2 cuillères à thé de pépites de chocolat blanc
  • 1 cuillère à thé de matcha bio SAKAO
  1. Faire chauffer le lait et les pépites de chocolat dans une petite casserole, en fouettant régulièrement jusqu’à la dissolution de celles-ci.
  2. Ajouter le matcha, et continuer à fouetter jusqu’à l’obtention d’un mélange homogène.
  3. Garnir de petites guimauves, et saupoudrer de matcha.

With colder weather, why not mix white chocolate and matcha to create a decadent hot drink? A hot matcha chocolate is a perfect drink to have a little break this winter! Here are the ingredients I used to create my organic hot matcha chocolate:

  • 300 ml Milk of your choice
  • 2 tea spoons of white chocolate chips
  • 1 tea spoon of matcha bio SAKAO
  1. Heat the milk and chocolate chips in a small saucepan, whisk until they are dissolved
  2. Add Matcha and continue to whisk until smooth
  3. Garnish with small marshmallows and sprinkle with matcha.

La Voie du Thé/The Way of Tea

« Cha-no-yu », qui signifie « la Voie du Thé », est une cérémonie du thé japonaise dans laquelle un hôte ou une hôtesse sert un bol de matcha à ses invités. Mais c’est bien plus qu’un thé avec des amis.

Reina a commencé à étudier la cérémonie du thé à l’âge de 14 ans avec sa grand-mère, qui enseignait la cérémonie du thé à l’époque. Elle a commencé à pratiquer les bases de la cérémonie du thé et participait à des cérémonies du thé annuelles avec sa mère.

Puisque la cérémonie du thé a une forte influence sur les arts japonais tels l’architecture, la composition florale, la poésie, la céramique, la laque, la peinture, la calligraphie, la conception de jardin, le kaiseki et la confiserie traditionnelle, l’hôte ou l’hôtesse doit bien connaître tous ces domaines pour offrir une cérémonie du thé qui est empreinte de sens.

Chaque détail doit être planifié avec soin. Le thème de la cérémonie est choisi en fonction des invités et de la saison. Il faut servir le bon type de confiseries ou de mets, choisir des bols de la bonne forme et sélectionner les outils de préparation du thé appropriés. Toutes ces choses doivent être assorties au rouleau de parchemin accroché au mur et à la composition florale dans la salle de thé.

Reina a continué à pratiquer la cérémonie du thé après son arrivée à Montréal. Après 20 ans en tant que praticienne de la cérémonie du thé, elle est encore plus consciente de la manière dont la cérémonie cha-no-yu exprime la culture et les croyances japonaises, surtout à l’extérieur du Japon.

Certains importants principes Zen de la cérémonie du thé s’appliquent dans notre vie quotidienne. L’un deux est omotenashi, l’hospitalité japonaise. En Occident, on entend souvent par hospitalité le fait d’offrir un service à la clientèle exceptionnel tout en s’attendant à quelque chose en retour. Omotenashi est une philosophie de service à la clientèle exceptionnel et désintéressé. Ça veut dire que l’hôte ou l’hôtesse d’une cérémonie du thé accueille les invités et leur prépare un bol de thé en y mettant tout son cœur et sans attendre quoi que ce soit en contrepartie.

Un autre important concept Zen est ichigo-ichie, un proverbe japonais qui signifie « une rencontre, une occasion ». Nous croyons que chaque cérémonie du thé ou rencontre dans la vie est une occasion unique et qu’il faut en apprécier chaque instant.

« Pour moi, la cérémonie du thé est une façon de méditer, de rester concentrée, d’échanger avec les gens et d’apprécier leur présence. Ces concepts sont depuis longtemps très importants dans notre quotidien et nous les avons transmis de génération en génération, et maintenant, j’ai l’occasion de les partager au Canada », dit Reina.

La cérémonie du thé japonaise n’est pas qu’une manière traditionnelle de célébrer délicatement la tranquillité et l’harmonie. C’est un espace rempli d’art japonais où les gens peuvent se déconnecter du chahut de la société, échanger avec les autres et trouver la paix intérieure.

“Cha-no-yu,” which means “The Way of Tea,” is a Japanese tea ceremony in which a host or hostess serves a bowl of matcha to guests. But it is much more than a simple tea gathering with friends.

Reina started studying tea ceremony when she was 14 years old with her grandmother, who was then a tea ceremony teacher. She started practising basic tea ceremony and participating in annual tea ceremonies with her mother.

Since tea ceremony has a strong influence on Japanese arts like architecture, flower arrangement, poetry, ceramics, lacquerware, painting, calligraphy, garden design, kaiseki and traditional confectionery, the host or hostess must be familiar with all of these things in order to host a meaningful tea ceremony.

Every detail is carefully planned out. The theme is chosen based on the guests and the season. The host or hostess must serve the appropriate food or sweets, the tea vessels must be the right shape and the correct tea-making tools must be selected. All of these items must match both the scroll hanging on the wall and the flower arrangement in the tea room.

Reina continued practising tea ceremony after arriving in Montreal. After 20 years as a tea ceremony practitioner, she is even more aware of how much cha-no-yu embodies Japanese culture and beliefs, especially outside of Japan.

Some of the important Zen principles in tea ceremony are applied in our daily life. One of them is omotenashi, Japanese hospitality. In the West, hospitality tends to mean providing exceptional customer service with the expectation of receiving something in return. Omotenashi is about providing exceptional customer service with no assumption of receiving a reward. In tea ceremony, this means that the host or hostess welcomes the guests and prepares a bowl of matcha from their heart without expecting anything in return.

Another important Zen concept is ichigo-ichie, a Japanese proverb that translates to “one encounter, one opportunity.” We believe that every tea ceremony or encounter in life is a once-in-a-lifetime chance and that we should appreciate every moment of it.

“For me, tea ceremony is a way to meditate, to stay focused, to connect with other people and appreciate their presence. We have long treasured these important concepts in everyday life and passed them down from generation to generation, and now I get to share them in Canada,” says Reina.

Japanese tea ceremony is not just a delicate traditional celebration of tranquility and harmony. It is a space filled with Japanese arts where people can disconnect from the bustle of society and connect not only with others but also with their inner peace.

Entrepreneure-immigrante épanouie/Proud immigrant entrepreneur

Reina dirige sa propre entreprise depuis environ 8 ans. Son travail consiste entre autres à recevoir, préparer et expédier des commandes, présenter ses produits à d’autres compagnies, créer et partager ses propres recettes et d’autres informations sur le thé dans les réseaux sociaux, chercher des nouveaux clients et marchés, collaborer avec d’autres compagnies locales, planifier des nouveaux produits et promotions et organiser des ateliers et des cérémonies du thé.

Être entrepreneure n’est pas toujours facile, et il faut beaucoup de temps pour construire une compagnie solide. Mais cette profession est différente et enrichissante grâce aux idées inspirantes, à la motivation et à l’énergie positive qu’elle reçoit chaque jour de ses clients et d’autres entrepreneurs.

Quand elle est arrivée à Montréal, Reina ne parlait pas français, ne connaissait pas la ville et n’avait pas de contacts à part quelques amis. Elle avait même pensé que ç’aurait été bien plus facile de lancer sa compagnie au Japon, où elle aurait pu parler et présenter ses produits dans sa langue maternelle, mieux comprendre le marché et déjà avoir des clients grâce aux contacts de sa famille.

Mais chaque défi qu’elle a relevé à Montréal l’a motivée à persévérer dans son parcours.

« Parler aux clients potentiels n’était pas facile pour moi au début. Maintenant, c’est la partie de mon travail que j’aime le plus. Quand je leur présente ma compagnie, ils s’intéressent souvent aux produits, à la culture japonaise ou à mon histoire. Je trouve ça très humain, et je n’aurais pas cette expérience si je travaillais à Tokyo », dit Reina.

Elle travaille maintenant avec plus de 100 compagnies et beaucoup de clients individuels au quotidien et a hâte d’agrandir son entreprise dans un avenir prochain.

Ces huit années d’expérience pratique lui ont appris non seulement à gérer une entreprise mais aussi à échouer et à se relever après chaque échec. Elle a aussi appris à apprécier chaque défi auquel elle fait face et chaque personne qu’elle rencontre car elle en tire toujours des leçons importantes.

17 ans après son arrivée à Montréal, Reina est une entrepreneure-immigrante épanouie.

Reina has been running her own business for around 8 years. Her work includes receiving, preparing and shipping orders, presenting her products to companies, creating and sharing her own recipes and other essential information about tea on social media, looking for new clients and markets, collaborating with other local companies, planning new products and promotions, hosting tea ceremonies and workshops, and much more.

Being an entrepreneur is not always easy, and it takes time to build a solid company. But what makes this profession different and rewarding is the inspiring ideas, motivation and positive energy she gets daily from her clients and from other entrepreneurs.

When she first arrived in Montreal, she couldn’t speak French, didn’t know the city and had no contacts aside from a few friends. She used to think it would have been much easier to start her company in Japan, where she would have been able to speak and present her products in her mother tongue, understand the market better and already have clients through her family connections.

But every challenge she faced in Montreal motivated her to keep moving forward and inspired her to continue this journey.

“Pitching in front of people wasn’t easy for me when I first started the company. Now, it’s my favourite part of the job. When I pitch, people are often interested in the products, Japanese culture, or my background. I find this so human, and I wouldn’t have this experience if I worked in Tokyo,” says Reina.

She now works with over 100 companies and numerous individual clients daily and she is excited about expanding her business in the near future.

These 8 years of hands-on experience taught her not only how to operate a business but also how to fail and to get up every time she gets knocked down. She also learned to appreciate every challenge she faces and every person she meets because they all teach her meaningful lessons.

17 years after arriving in Montreal, Reina is now a proud immigrant entrepreneur.

Perpétuer une tradition familiale centenaire/Carrying on a century-old family tradition

Reina a quitté le Japon pour suivre son rêve et voir le monde pour la première fois il y a dix-sept ans. Maintenant, elle se sent plus proche de sa famille que jamais.

En partageant sa passion pour le thé et la culture japonaise au fil de son parcours comme entrepreneure, elle a eu l’occasion de tisser des liens avec les gens, leur apprendre ce qu’elle sait, mais surtout, se rapprocher de sa famille et de ses racines.

Après s’être lancée dans cette aventure, elle a découvert que son arrière-arrière-grand-père (le père de mon grand-père) exportait déjà du thé de Shizuoka à l’extérieur du Japon il y a plus d’un siècle. C’était le premier thé vert Japonais connu dans le monde.

Son arrière-grand-père a hérité de la plantation à Shizuoka, qu’il a ensuite légué à son grand-père, qui a éventuellement épousé sa grand-mère, fille d’un propriétaire de magasin de thé à Shinjuku, Tokyo avec lequel il avait travaillé un certain temps.

Ce n’est qu’après avoir lancé son entreprise et commencé à s’intéresser à ses racines que Reina a découvert que tous les membres de sa famille suivaient déjà la même voie qu’elle et partageaient leur culture et leur passion pour le thé tant au Japon qu’ailleurs dans le monde.

Elle se souvient également que sa grand-mère voyageait à l’étranger pour animer des cérémonies du thé, et a vu plusieurs photos de sa mère animant des cérémonies du thé lors de ses études aux États-Unis, où ses parents se sont rencontrés.

Depuis qu’elle s’est établie à Montréal, Reina a rencontré un grand nombre de personnes, y compris d’autres entrepreneurs, a eu plusieurs opportunités et a fait face à divers défis. Les expériences qu’elle a vécues ont eu un énorme impact sur elle et ont transformé sa carrière et sa vie.

« Je me sens chanceuse de pouvoir suivre dans les pas de mes ancêtres. Ma mission est différente de celle des autres entrepreneurs, et j’adore ça », dit Reina.

Seventeen years ago, Reina left Japan to pursue her dream and see the world for the first time. Now, she feels more connected to her family than ever before.

By sharing her passion for tea and Japanese culture over the course of her journey as an entrepreneur, she has been able to connect with people, teach them what she knows, but most importantly, connect with her own family and roots.

After embarking on this journey, she discovered that her great-great grandfather was already exporting tea from Shizuoka to the rest of the world over a century ago. It was the first Japanese green tea known abroad.

Her great-grandfather took over the plantation in Shizuoka, which was then handed down to her grandfather. Her grandfather eventually married her grandmother, the daughter of a Tokyo tea store owner whom he worked with for some time.

It is only after she started her own company and began looking into her family roots that Reina realized all of her family members were already doing what she was doing, sharing their culture and their passion for tea within and outside of Japan.

She also remembers that her grandmother used to travel abroad to perform tea ceremonies, and has seen many pictures of her mother performing tea ceremonies during her studies in the United States, where her parents met.

Since moving to Montreal, Reina has met so many people, including other entrepreneurs, was given so many opportunities and faced various challenges. These experiences had a great impact on her and transformed her career and her life.

“I feel blessed to do what I do just like my ancestors. I have a different mission than other entrepreneurs and I love it,” says Reina.

J’adore boire mon matcha bien chaud, surtout à ce temps-ci de l’année! Cependant, j’ai découvert que cette légère poudre verte s’agence très bien à certains desserts. Je vous propose ici de petites boules d’énergie protéinées que vous pourrez manger en collation.

Boule d’énergie protéinées au matcha et pistaches
Ingrédients : 
4 c. à table de beurre d’amande
2 c. à table d’huile de coco
1 c. à table de sirop d’érable (miel)
1/3 de tasse d’avoine
1 scoop de protéine vegan
2 c. à thé de matcha bio Sakao
1/2 tasse de pistache
5 dattes de bam
1 pincée de sel Himalayan
1/2 tablette de chocolat noir 85%
Préparation : 
  1. Placer tous les ingrédients (sauf le chocolat) dans le bol d’un robot culinaire. Bien mélanger.
  2. Façonner les boules à la main.
  3. Faire fondre le chocolat noir et enrober les boules entièrement ou verser en coulis.
  4. Placer quelques pistache en décoration.
  5. Conserver au frigo.
Donne environ 10 boules d’énergie.

I love to drink my matcha really hot, especially at this time of year! However, I have found that this light green powder goes very well with some deserts. Here is a little tasty protein energy bites recipe that you can eat as a snack.

Matcha and pistachio energy bites
Ingredients:
4 tbsp. almond butter
2 tbsp. coconut oil
1 tbsp. Maple syrup (honey)
1/3 cup oats
1 scoop of vegan protein
1/2 cup pistachios
5 bam dates
1 pinch of Himalayan salt
1/2 bar 85% dark chocolate
Preparation:
  1. Place all the ingredients (except chocolate) in the bowl of a food processor. Mix well.
  2. Roll into balls.
  3. Melt the dark chocolate and coat the balls completely or drizzle on top.
  4. Place a few pistachios as decoration.
  5. Keep in the fridge.

Atelier de thé Japonais au Méxique / Japanese tea workshop in Mexico

Nous avons eu la chance d’offrir un atelier de cérémonie de thé japonaise à un groupe d’amateurs de thé japonais à Cocoyoc au Mexique en collaboration avec l’Escuela Mexicana de Té.

Un salon de thé avec un petit jardin avait été construit pour donner aux participants la chance de vivre une vraie cérémonie de thé japonaise.

Les participants ont appris la bonne étiquette avant et pendant la cérémonie de thé, la manière d’entrer dans le salon ainsi que les étapes de la cérémonie.

La cérémonie commence par la purification de chaque ustensile. On procède ensuite à la préparation du Matcha, puis on termine avec le nettoyage des ustensiles. Lors de la cérémonie, les participants se voient offrir des sucreries et leurs bols de thé de manière traditionnellement japonaise par notre associée.

C’était également une opportunité d’apprendre la philosophie Zen Ichigo Ichie (une rencontre, une opportunité). Selon le mode de pensée Ichigo Ichie, il faut apprécier la présence de chaque invité, des ustensiles utilisés, de la saveur du Matcha, de la température de l’eau, de la calligraphie, des fleurs, des sucreries, etc. parce que ces choses et ces moments lors de chaque cérémonie de thé sont uniques et ne se reproduiront plus. Ce concept s’applique donc aussi à la vie quotidienne et nous apprend à apprécier le moment présent et tout ce qui nous entoure. Le “présent” est un temps du verbe, mais il nous rappelle aussi la présence des “ petits cadeaux de la vie, incluant les personnes et les choses”.

Dans chaque cérémonie, nous avons utilisé des bols à thé faits à la main au Mexique pour vraiment profiter du mélange culturel entre ces deux pays.

Il faisait chaud à Cocoyoc mais il faisait encore plus chaud dans le salon à cause de l’eau chaude et du grand nombre de gens dans un petit espace, mais tous les participants étaient quand même très satisfaits de cette expérience.

Dans d’autres salles, l’équipe de l’Escuela Mexicana de Té offrait un atelier sur le Matcha: son histoire, une comparaison des différentes qualités de thé et une explication du mode de préparation du Matcha. L’autre équipe faisait une présentation sur plusieurs sortes de thé vert de notre plantation au Japon: Fukamushi, Kona-cha, Sencha et Gyokuro.

Le deuxième jour, nous avons organisé une présentation et un atelier sur la culture japonaise. Nous avons parlé de l’origami, de la calligraphie, des sucreries japonaises et d’autres sortes de thé vert: Genmai-cha, Hoji-cha avec Genmai, Hoji-cha et Genmai-cha avec Matcha.

Nous avons terminé notre atelier par une dégustation de confiture au Matcha avec un pain Mexicain nommé Concha à saveur de Matcha.

Nous remercions tous les participants d’être venus et d’avoir partagé cette expérience magnifique avec nous. De plus, cet atelier de thé de deux jours n’aurait pas été un si grand succès sans l’aide de l’Escuela Mexicana de Té qui nous a aidés à mettre sur pied ce projet.

We were given an opportunity to offer a Japanese tea ceremony workshop to a group of Japanese tea lovers in Cocoyoc, Mexico in collaboration with the Escuela Mexicana de Té.

A tea room with a little garden was built to allow the participants to experience a real Japanese tea ceremony.

The participants were able to learn the correct etiquette before and during the tea ceremony, the right way to enter the room and the steps of the ceremony.

We started with the purification of each utensil, then followed with the preparation of the Matcha and ended with the cleaning of the utensils. The participants were given sweets and bowls of tea in the traditional Japanese manner by our associate.

It was also an opportunity to learn the Zen philosophy of Ichigo Ichie (one encounter, one opportunity). According to Ichigo Ichie, the presence of each guest, each tea utensil we used, the flavour of the Matcha, the temperature of the water, the calligraphy, the flowers, the sweets, etc. must all be appreciated because each specific moment during each tea ceremony only happens once and will never reoccur. The concept of Ichigo Ichie thus also applies to daily life and teaches us to appreciate the present moment and everything we have around us. Though the “present” is a verb tense, it also refers to these ‘little gifts of life, which include people and things.”

In each ceremony we performed, we used tea bowls hand made in Mexico for a truly culturally diverse experience.

In other rooms, other members of the Escuela Mexicana de Té were conducting a Matcha workshop where they talked about the history of Matcha, compared different qualities of Matcha and explained how to prepare Matcha. Other members gave a presentation about different types of green tea from our plantation: Fukamushi-cha, Kona-cha, Sencha and Gyokuro.

On the second day, we organized a presentation and a workshop about Japanese culture. We talked about origami, calligraphy, Japanese sweets and other types of green tea: Genmai-cha, Hoji-cha with Genmai, Hoji-cha and Genmai-cha with Matcha.

The workshop ended with a tasting of a delicious Matcha spread along with a Matcha flavoured Mexican pastry called Concha.

Our appreciation goes out to the participants who came and shared such a great experience with us. Many thanks also to the Escuela Mexicana de Té for making this two day workshop a great success.
